This salad is super delicious and versatile. Have it by itself for a tasty lunch or serve alongside your main – the choice is yours!

1 sweet potato (approx. 160g) skin on, cut into 1cm cubes

1 courgette (approx. 160g) skin on, sliced and cut into quarters

2 rashers bacon trim off the fat, cut into 1cm cubes

100 g frozen edamame beans

small handful sage chopped

30 g reduced fat feta



Preheat the oven to 200C/ 180C fan/ gas 6.


Add the sweet potato and courgette to a large roasting pan, season with black pepper and spray with low calorie cooking spray. Roast for 25-30 minutes or until golden brown.


While the vegetables are roasting place a pan over a medium heat and spray with low calorie cooking spray. Add the bacon and sage, fry for 2-4 minutes or until the bacon is cooked.


Cook the edamame beans according to packet instructions (around 2-3 minutes).


When the sweet potato and courgette are roasted, remove from the oven and place in a serving dish with the bacon, sage and edamame beans. Mix the ingredients together and crumble over the feta to serve.
