These blueberry and banana oat pancakes are D.E.L.I.C.I.O.U.S!
If you want a ‘healthier’ pancake recipe for Shrove Tuesday, look no further. These pancakes are made with oats instead of flour which packs them full of fibre. Not to mention all the nutritional benefits you get from the banana and blueberries too!
Prep and cooking time – 10 mins
Servings – 2 (1 serving = 2 pancakes)
Calories per serving – 251kcal
75g whole oats
1 tsp baking powder
1 small pinch salt
1 medium banana
1/2 tsp vanilla extract
40ml skimmed milk or milk alternative
low calorie cooking spray
Add all of the ingredients into a blender except the blueberries and blend until smooth. The batter will be thick, but pourable. If too thick add a dash of milk and blend again.
Spray a large frying pan with low calorie cooking spray and place on a medium heat. Ladle approximately 2 tbsp of the pancake mixture into the pan. If necessary spread out with the ladle but remember you want these to be nice and fluffy!
Immediately add a few blueberries on top on the pancakes, cook for 1-2 minutes and flip over with a spatula. Cook for another 1-2 minutes, you want both sides to be nicely browned and cooked through.
Transfer the cooked pancakes to a plate and repeat the frying process until you have used all the batter.
Eat warm with a sprinkling of extra blueberries!
