Lime & Mint Mojito

Serves: 1


2-3 sprigs of fresh mint (save a couple of mint leaves to serve)

Half a lime (cut into 3 small wedges, save one to serve)

5-6 ice cubes

150ml chilled sparkling water


Place the mint leaves and 2 lime wedges in a high ball glass. Muddle using the end of a rolling pin or wooden spoon to crush the mint and squeeze out the lime juice.

Add the ice cubes to the glass and top with the chilled sparkling water.

Top with mint leaves, 1 lime wedge and serve with a fun (eco-friendly) straw!

Ginger & Pomegranate Sparkler

Serves: 1


1 tbsp pomegranate seeds

2 slices orange peel

2-3 ice cubes

50ml pomegranate juice (or cranberry)

100ml chilled light ginger ale


Place the pomegranate seeds, orange peel and ice in a martini glass.

Pour over the pomegranate juice and light ginger ale, enjoy!

Tip: For an extra zing you can grate in some fresh ginger!

Elderflower & Cucumber Spritz

Serves: 1


150g cucumber

1 sprig of mint

Half a lime (zest and juice)

30ml Elderflower cordial

100ml Soda water

4 ice cubes


Roughly chop the cucumber and place in a food processor with the mint leaves, lime zest and juice, and blitz to a pulp.

Tip the pulp into a fine sieve set over a bowl. Use a wooden spoon to press out as much juice as possible. Discard the pulp

Add the elderflower cordial, soda water and ice cubes to the bowl with the minty cucumber juice, stir.

Remove the ice cubes and pour into a champagne flute to serve.
